With the recent sales on avocado and my desire for some sort of dip or dressing, I thought I could make something similar to Asian Dressing, but thickened with avocado so we could use it more like a dip. (Although it still works as a thick, yummy dressing.) I also used quite a bit of ginger because it's yummy. :) To make the dip, just throw everything into a food processor or blender and process or blend until desired consistency reached. I used a food processor, and a blender would result in a slightly thinner feeling, but smoother dip.
